Matsunotsukasa Junmai Daiginjo - Tosui
- Shiga Prefecture, Matsuse Brewery -

The specification changed from aging sake brewed in 2012 to Junmai daiginjo.
Tosui is brewed from 45% milled Yamadanishiki grown in Tojo area of Hyogo a small portion of 600 kg.
As the result, with a distinctive melon aroma characteristic of Matsunotukasa and maturing makes taste well balanced and been favored.

With 40% milled Yamadanishiki grain grown in the Choshu District of Yamaguchi Prefecture used in this brew, Ichibanmatoi is at its peak in both quality and taste among TOYOBIJIN.
The name of Ichibanmatoi was named after the best cloths worn only for important occasions.

Shun is Junmai daiginjyo brewed from 40% milled Yamadanishiki grown in Itoshima district of Fukuoka Prefecture in a small portion of 500 kg.
The rice malt is made by hand  with care.
The refined aroma of ginjoshu and smoothness and mild taste are highly balanced.
It may perfectly match with  lightly seasoned dishes and fish dishes such as pot dishes called "Ara-Nabe".
